Got the sparkling rose for us and Tiger beer for the best friend. After a nice run in Central Park I decided to treat myself to a nice meal since it's right across the street. Annoyed me. The chicken wings were tangy, a bit spicy, and had a slight bacon taste. :). On a scale of 1 to 10, with 10 needing a fire department to put out the blaze in your mouth, these noodles were a 20. It wasn't bad but it does not have me wanting to return. Want to chime in. While chowing on some fine noodles I looked up and asked my boyfriend, "how can the food of whatever city we might move to in the future come to this level?" The pork bun and big eye tuna crudo were delicious and my entree, the ginger scallion noodles, was impressive. The Ssäm sauce was sweet and slightly spicy and a perfect condiment. Ginger scallion sauce is one of the greatest sauces or condiments ever. The matcha cocktail drink is absolutely amazing! For some reason they end up watery and dilute whatever it is that the drink was trying to highlight. It was also a great counter balance to the spicy noodles, with it's pickled shiitake mushrooms and cucumbers. The dish goes something like this: boil 6 ounces of ramen noodles, drain, toss with 6 tablespoons Ginger Scallion Sauce (below); top the bowl with 1⁄4 cup each of Bamboo Shoots (page 54); Quick-Pickled Cucumbers (page 65); pan-roasted cauliflower (a little oil in a hot wide pan, 8 or so minutes over high heat, stirring occasionally, until the florets are dotted with brown and tender all the way through; season with salt); a pile of sliced scallions; and a sheet of toasted nori.  My wife got the ginger scallion noodles. I loved their split-flap display which showed the featured menu items, really neat piece in the restaurant. Feel free to add it back.). It was tasty and baked well. My non-veg friends/family have been equally impressed. David Chang says that ginger scallion sauce is “one of the great sauces or condiments ever,” and it’s one of Momofuku’s mother sauces. The service was good, warm, and welcoming! Heat grapeseed oil in a small saucepan over high until oil is shimmery and hot … They were perfectly chewy with a variety of bright pickled vegetables with the tastiest mushrooms I've probably ever eaten. Taste and check for salt, adding more if needed. One of my friends didn't cope well with the chili oil in the salad though which was quite entertaining for the rest of us. I've had peppers that were mushy, without any snap, so I appreciate when something is executed well. Only complaint is that 10:30pm seems to be a hard cut-off for desserts other than ice cream. This brings me to the point that the people who will likely enjoy Noodle Bar the most are those not familiar with authentic Asian food, which is not a bad thing per se, but it helps knowing in advance to expect food catered toward a white audience. The food lived up to the high expectations associated with the Momofuku brand. But as someone who likes exploring NYC's rich cultural foodscape, it's not somewhere I see myself frequenting knowing there's much better places for this kind of food out there. Hubby and I both ordered the Smoked Pork Ramen as we were told it's better than the Spicy Beef Ramen. Ever. Use as directed, or apply as needed. The ambiance is full of energy and excitement. Improvise to your needs, but know that you need ginger scallion sauce on your noodles, in your fridge, and in your life.
